Comforting Baked Yogurt

There are times in life when curve balls are thrown our way or we just aren’t feeling strong enough to stand in our powder for one reason or another. As great as it would be to crawl into bed with the world’s comfiest blankets or fold ourselves into the arms of a loved one for a nurturing hug that feels like it lasts a lifetime, that's not always possible.Next time you find yourself in need of soothing but can’t tuck yourself into bed, tuck into a slice of this Comforting Baked Yogurt instead. 


Throughout time, humans have leaned on food to be a staple of not just survival but also celebration, marking life’s milestones, rituals, status, and (you guessed it!) comfort. Usually, when we think of comfort food we think of something high in calories like chocolate, french fries, or maybe my personal favorite, biscuits and gravy. This dish challenges comfort food norms and ditches the high calorie, bad for you expectation and is instead packed with protein, antioxidants, and magic!


 Blueberries and cranberries are both known for their protective properties when they lend themselves to this dish to create a feeling of safety. Feeling safe and protected gives us the space to breathe and focus on self soothing. The yogurt brings us nourishment and nurturing, letting us feel like babies being embraced in the arms of the Goddess. Eggs are an important and versatile ingredient in a witch’s kitchen. In this dish they bring protection and healing, allowing you to begin to feel a peaceful strength wash over you. From crafting this dish to the very last bite, indulge yourself in the magical experience of bringing comfort to yourself in mind, body, and spirit. 



Ingredients:

2 cups plain Greek yogurt

4 eggs

¼ cup honey

2 tsp vanilla

3 TBS cornstarch

2 TBS flax meal 

1 ¼ cup blueberries, divided

1 ¼ cup cranberries, divided


Preheat your oven to 350 and line a backing dish with parchment paper.


In a large mixing bowl, whisk together yogurt, eggs, honey, and vanilla. Mix until it is evenly combined and smooth. 


Add cornstarch and flax meal to the mixture and whisk until the powders are well incorporated. 


Gently stir in 1 cup of each blueberries and cranberries. 

Pour the yogurt mixture into your prepared baking dish. Lightly sprinkle the remaining berries on top and pop your baking dish in the oven for 45  minutes. Check to make sure the center of the dish is firm and does not giggle.


Remove from the oven and allow to cool for at least 45 minutes before cutting into squares.
